How to eat more vegetables?

Day 26 of the zero waste challenge big
How to eat more vegetables? 6

Welcome to day 26 of the zero waste challenge.

Let’s get more vegetables in your belly!

1/3 rd of the world produced food gets thrown out! If you just fell backward from your chair, I am with you. I had to hold pretty tight myself. It seems strange that we still have people starving, yet so much food gets thrown out.

The population is growing, which equals to more food being produced.

That also means more deforestation to make room for more cattle and not forget more grain to feed the animals.

The planet is clearly struggling; climate change and water scarcity are becoming the top news stories. But what can you do about it?

You don’t have to become the new Greta Thunberg. Just small steps one after another will make a big difference, especially when we all do it.

Well, like with every problem, there is a solution. These solutions often don’t even require that much effort, just adapting a couple of new habits.

In this case, it is about preparing your own meal and especially to eat more vegetables, oh and going vegetarian 😉

Yes I know I just dropped the veggie bomb!

No, I am not going to hand you a recipe book; you can google that yourself. But what I want you to do today is, prepare a meal plan for the following week.

The benefits of having your own meal plan

Let me first start by saying that I used to be a big meat eater. Like most of us, we are told you need meat for protein, and you need milk for calcium. Which is total BS? It is all just a marketing campaign that started this fire. Where do you think the animals get their protein from?

I recommend you watch the new Netflix movie called The Game Changers.

Another good one is Cowspiracy, and I stopped eating meat straight away. So there seems to be something working in my favor when I watch a documentary like this. Give it a try if you have been meaning to go veggie but think you will be missing out on something.

For a couple of years now, I have been a flexitarian, my main diet is vegetables, and thanks to my wife (who loves cooking), I get to eat some really delicious vegetarian meals.

She definitely plays a significant role in this transition because before I met here, I would cook like I would cook a meal with meat but leave the meat out.

Well, that is freaking boring, let me tell you. The truth is, you need to take some pleasure in cooking, and you need to get a bit more creative than sauerkraut, potatoes, and a steak.

When we cook together now, I cut the veggies and leave the cooking to my wife. She loves it, and I want to make her happy.

No jokes aside, it works best this way, for both of us.

But I also discovered the secret. Spices! Not only do they have a lot of health benefits, but they make your food taste incredible.

What about losing weight?

I started training calisthenics round about half a year ago, and to be honest, at first, I was a bit worried not to get enough protein and iron. I quickly realized that this wasn’t the case, and since I have my vegetarian meal plan, I have actually become more muscular, healthier, and I recover quicker.

  • I have more energy
  • I need less sleep
  • I just feel good

So the challenge today is to create your own meal plan for the week ahead and notice how you are also saving money. Perhaps try and skip that steak and watch one of the recommended movies. Let me know how you go? I would love to hear your story.
